The German has been an artist, writer, and boxer (well, sorta), and now is the owner and chef of That Little Wine Bar in George Town, Penang. We talked to Tommes about his experiences of opening a western-cuisine restaurant in a place that takes its street food heritage proudly, and asked him to spill a couple of long-held chef secrets.
